Craterellus cornucopioides

Also called the Black Trumpet, these mushrooms are known in France as Trompette des Morts which literally means the Trumpet of the Dead.  It’s not a very appetizing name but it is the most delectable mushroom. This season the markets of Provence offer a wide selection of mushrooms. We have had regular rainfall this autumn which makes for a good mushroom harvest.

The Trompette des Morts is a small, black tubular or funnel shaped variety usually found near patches of moss. Some refer to them as Black Chanterelles. Chanterelles (Cantharellus) can also be found this time of year under coniferous trees. For those who like to do their own harvesting the great thing about France is that the pharmacists are trained experts in Mycology. The study of Mushrooms or Fungi is an integral part of a pharmaceutical degree. Each year mushroom hunters carrying overflowing baskets can be seen waiting in line to speak to the pharmacist who will either confirm they are edible or not.
