Three Star Michelin chef, Alain Passard of l’Arpège in Paris has published « Collage & Recettes » which is an illustrated cookbook of 48 recipes featuring his own collage work. The collages were recently on exhibit in Cassis where Mr. Passard spent a long weekend as the guest of honour at the grape harvest festival.
Suffering from jet-lag on a trip to Japan in 2008, Mr. Passard worked on the first collage. He found himself cutting out different shapes and colours and proceeded to make a plate of vegetables which is less ephemeral that the real thing. He says that the collages actually inspire him to reach visual harmony in his cuisine. The collage shown above is titled Navets mauves et citron jaune au poivre noir (Mauve turnips with yellow lemon and black pepper).
Mr. Passard grows his own organic produce outside of Paris and yields 40 tons of produce annually. He grows over 450 varieties of fruit, vegetables and aromatic herbs.
The collage tour began at the beginning of 2011 and will end in Paris at the Musée Nissim de Camondo, the Decorative Arts Museum overlooking the Parc Monceau, from October 19th to November 13th 2011 if you didn’t get a chance to pop over to Cassis.
